We all love tucking into a hot full breakfast at the RV resort. The table groans under platters of eggs, sausage, beans, toast, fruit, pancakes, hash browns, and coffee. But you don’t want to open the whole kitchen daily while camping. Let’s check out five easy campsite breakfasts that will take little time or even demand that you hire an assistant to flip the pancakes.

Peanut Butter, Overnight Oats

No cooking is needed! Mix up a big spoon of warm peanut butter, an equal amount of honey, half of a mashed ripe banana, 1/3 cup of old-fashioned oats, and a good dollop of milk. Place the serving in a sealable container and leave it overnight in the cooler or fridge. In the morning, slice up the rest of the banana and dig in with a spoon. If you wish, zap it in the microwave for 30 seconds to warm it up.

Blueberry-Cinnamon Campfire Bread

Line a baking pan with aluminum foil. Spread out a loaf of sliced cinnamon swirl bread on the foil. Mix up a half-dozen eggs, a cup of milk, and a dash of vanilla, and pour the mixture over the bread. Scatter a large handful of chopped nuts over the top, and then add a half-pint of fresh blueberries.
Close the foil, place the pan on a grill or over a campfire, and let it bake for about 30 to 40 minutes–long enough for the milk mixture to cook and set. Open the foil and serve topped with maple syrup and your remaining blueberries.

Parmesan Egg-in-a-Hole

Put your skillet or flat-top to work. Butter up both sides of a thick slice of Texas Toast-style bread and set it to brown on the skillet–turning as needed. Remove from heat and cut out a circle in the centre. Return to the heat with melted butter or a non-stick pan and crack a fresh egg into the circle—season with salt, pepper, and Parmesan cheese. Cook until the yellow is done to your taste and serve!

Make Ahead Yogurt Parfait

Have the kids help to pack breakfast before you leave for the weekend. Load up an 8 oz plastic storage tub with a layer of sliced strawberries, vanilla yoghurt, and blueberries. Leave room on the top for your granola. Store the parfaits in your cooler or fridge.
On the first camping morning, crack open the box of granola and add to the top of the parfait and mix in. So yummy, so nutritious, and so simple.

Foil Breakfast Sandwiches

Add a packet of sliced cheese, fully cooked back bacon, a bag of English muffins, and some pre-cooked egg patties to your cooler. Before heading out to the lake, get the fire going. Toast up your split muffins in your skillet. Then layer the egg, bacon, and cheese and sprinkle on some hot sauce to create a sandwich. Wrap the sandwich in some foil and toss in the fire for a few minutes to heat everything and melt the cheese. Eat them hot, or pack them in your cooler for munching on the boat.
